Grain Free - Chocolate Chip Cookies

I'm not sure if I know anyone that doesn't love a warm chocolate chip cookie. As the seasons start to change and the weather begins to cool I start craving warm soups and of course a delicious warm chocolate chip cookie. Being a mom of two little kids I'm always looking for ways to get some nutrients into them, and at the same time finding fun treats that aren't loaded with artificial ingredients that they like to eat.

This is not an everyday recipe, but it's healthier alternative to the real deal chocolate chip cookies, and they're super yummy. My daughter loves chocolate, so as a special treat we made these together, and they did not disappoint. These can be made in very little time and are without refined sugars, grains, and fake fats. These a win in my book.


Prep Time : 10 min. Bake time: 12-15 min.

Serves: 12-15 cookies


Ingredients

  • 2 cups of almond flour

  • 1/2 tsp baking soda

  • 1/4 cup coconut sugar

  • pinch of salt

  • 1/2 cup grass-fed butter, softened

  • 1 Lg. egg

  • 1 Tbsp. vanilla extract

  • 1 cup dark chocolate chips ( I use enjoy life brand)

Instructions

  1. Preheat oven to 350ºF

  2. Mix together the dry ingredients( excluding the chocolate chips). Add the softened butter, egg, and vanilla extract, and mix by hand. Stir in the chocolate chips.

  3. Form small balls of dough on a prepared cookie sheet and bake for 12-15 minutes. these will still be soft in the middle when you take them out of the oven, but will firm a little when they cool.

  4. Let cool for 5 minutes.

  5. Enjoy!
